Farm and Products:

In the organic farm Valle Siriaca, certified by CODEX (Organizzazione di Controllo e Certificazione – Certification and Control Organization), meat, oil, vegetables and fruits are regularly produced and sold. The restaurant mainly uses our production.

Meat production follows the strict organic regulations through the breeding of Maremmana breed cows crossed with a Cherolaise bull, all this according to the natural rhythms. Calves are born and grow up in a wild state with dozens of hectares at their disposal eating green pastures and, when the season doesn’t allow it, hay directly produced in the farm with the same strict organic criteria. In the farm also poultry are reared for meat and eggs. The feeding of the animals and their life quality are particularly accurate. They can freely move around in wide spaces they have at their disposal. The farm has an area assigned to the periodical direct meat sale. This in order to put into practice the idea of taking the consumer directly to the producer, thus allowing him to personally see the origin, quality, breeding procedures of the product he buys.

Oil production occurs through the growing of olive trees, never treated with pesticides or other products. The harvesting is hand made and the cold press occurs few hours after the harvesting, following the millenary tradition of the region.

Vegetables and fruits production follows the farm style which doesn’t allow the use of any chemical and/or organic products.

The sale of these products is highly conditioned by the production quantity and by their use in the preparation of the restaurant meals and jams.

All farm productions are carried out according to the organic farming rules.

The only fertilizers allowed are those obtained from the manure of the cattle bred in the farm.
